Also known as Pacchaperumal, this El type of rice is cultivated in the Yala season. It is named “Siyapath El”because its rice contains the same energy contained in a lotus (Siyapath) petal.

The thickness of the crust of rice varies with temperature. Pachchaperumal rice keeps the ions in its crust to control the osmotic pressure in extreme heat.

Here, the composition of carbohydrates changes. Glucose converts into other forms of carbohydrates.
